It is true.

About 20 games were played over a few days at Francis Field on the Wash U campus.  SLU went undefeated in their 4 games.  They were awarded the gold medal by virtue of best record.  We defeated such powerhouses as Kemper Military Academy, Wentworth Military Academy, Central High school, and the always formidable Kentucky University.  SLU went 10-0 that season and was not scored upon.  They defeated Mi$$ou on the road 17-0.  SLU had the best record of any western or midwestern independent schools in the country.

Thanks.  When I googled it, I couldn’t find anything.  Where did you find this information?  The FOX article lists many games played at Francis Field, but none of them were the Billikens.  The Olympics site makes no mention of a gold medal ever given in American football.

The 1904 Olympics was undoubtedly the weirdest ever held. The 1904 Worlds Fair was a much bigger deal, so the organizers rolled other events into the Olympics that weren’t official Olympic events to draw crowds and entertain people on their way to and from the Fair just as demonstration events.

1904 Olympic Marathon is one of the weirdest sports stories in history.

Saint Louis University and Washington University in St. Louis initially sought to contest an Olympic football championship, but were unable to host it officially. Both teams ended up simply playing their regular seasons from teams around the country, making their status as an official demonstration sport dubious. St. Louis was declared the champion "by default." As Francis Field was the main stadium for the 1904 Summer Olympics, only those games would have been considered a demonstration for Olympic crowds. Only two games at Francis Field were played that did not involve Washington University: a match between Purdue and Missouri, and the first match between two Indian school teams (Haskell and Carlisle) who were considered powerhouses in college football at the time

Default in this case means by proclamation of the local newspapers.  SLU was also proclaimed to be the state champions that season.
