It is summer , so slow time.just asking opinions

We have found a bbq place here we really like,  Charleston based, so Southern...

They do not offer French Fries, should a bbq place serve fries??

I would think so yes.   Baked beans, fried corn on the cob, mac & cheese, even hush puppies would be better options personally, but no fries is pretty unusual

This poll is obviously biased by the geography of the participants.  KC style is good.  Texas style is the best.  But within Texas the Hill Country is the best. 

I enjoy Memphis, and South Eastern style mustard based on Boston butt with BBQ slaw.

As for sides...

Fries are not required

Slaw and beans are required 

The type of bean is up for debate I enjoy pinto, charro, or borracho beans.

Mac & cheese is standard

Potato salad is standard

Hush puppies are a no.  That's a catfish shack staple not BBQ. 

Corn bread is good,  or even tortillas or in Texas sliced white bread

Need dill pickle chips, and fresh onion for it to be Texas style. 

For those who don't BBQ, pork, ribs that's easy, but brisket is truly hard to master and thus it's the true measure of skill.

Slaw, beans, potato salad, Mac and cheese, cornbread all rate above fries for a side in BBQ. Nothing wrong with having fries, they just don’t go as well as the other choices.

I should know, but what makes St. Louis style barbecue distinct from say Kansas City-style other than the sauce?  Or is it only the sauce?

Pretty much.  St. Louis style typically is known for the sauce, but also our distinct cuts of meat like st. louis style ribs and pork steaks, and St. Louis style BBQ is almost never smoked, the meat is cooked much quicker.

I am not sure I would agree with almost never smoked.  Go to a good BBQ place and it is smoked.

People do this in town sure, but St. Louis style is to grill then sauce.  KC style is known for slow smoking and dry rubs.

If you are talking about somebody in their backyard then OK but not in restaurants they smoke and dry rubs.

The best style for me all depends on what you are eating.  Pork steaks are St. Louis all day.  Brisket is Texas.  Ribs are Memphis.  Chopped pork is Carolina.
